From Origin to Kauaʻi
More than one origin.

Our cacao has more than one origin, and each plays a different role in what we create.
Some grows close to home. When Kauaʻi cacao is seasonally available, we work with it in very small batches, staying close to the process from harvest through fermentation and drying.
Beyond the island, we source carefully selected cacao from established growing regions, choosing each ingredient for its flavor, texture, quality, and the way it contributes to the finished blend.
We do not believe thoughtful sourcing has to mean everything comes from one place.
To us, it means knowing what we are working with, respecting where it comes from, and bringing those ingredients together with purpose.
The final making happens here on Kauaʻi — where these different expressions of cacao become part of one Mana Cacao ritual.

Rather than asking one cacao to do everything, we work with different expressions of the fruit — each chosen for the character, texture, and balance it brings to the finished cup.
Dominican Republic · Zorzal
Whole cacao.
Richness & body.
Our cocoa liquor comes from Zorzal cacao in the Dominican Republic.
Cocoa liquor is whole cacao ground into a smooth mass, retaining both the cacao solids and its naturally occurring cacao butter.
It gives our blends fullness, richness, and the rounded texture that makes a cup of cacao feel deeply satisfying.
This is the foundation of the cup — whole cacao with depth, substance, and body.
Peru · Cusco / Huánuco
Concentrated cacao.
Depth & balance.
Alongside whole cacao, we use an ultra-high-fat natural cocoa powder from Peru, made from cacao sourced across Cusco and Huánuco.
Its higher natural cacao-fat content helps preserve richness while giving us another way to shape the intensity and balance of the blend.
Used together with cocoa liquor, it allows the cacao flavor to feel full and expressive without making the finished cup unnecessarily heavy.
Where whole cacao creates body, cocoa powder helps us refine depth, balance, and cacao character.
Kauaʻi · Hawaiʻi
Seasonal cacao.
Close to home.
When local harvests allow, Kauaʻi-grown cacao becomes part of what we make as well.
We work with it in very small seasonal batches, staying close to the process through fermentation, drying, and preparation.
Its availability naturally changes with the harvest, and we prefer to honor that seasonality rather than pretend local cacao is available in unlimited quantities.
It creates a direct connection between the cacao we work with and the island where Mana Cacao is made.
Why We Blend
The goal is not one perfect origin.
The goal is a cup with richness, depth, balance, and character.
Whole cacao gives us body. Ultra-high-fat cocoa powder helps us shape intensity and balance. Seasonal Kauaʻi cacao brings us closer to the place where the final blend is made.
